Mushroom, Leek & Broccoli Frittata

Ingredients

  • 2 teaspoon olive oil
  • 1 teaspoon butter
  • 3/4 cup finely chopped broccoli florets
  • 1/2 cup chopped mushrooms
  • 1/2 cup chopped leeks
  • 5 eggs
  • 6 egg whites
  • 1 cup shredded aged cheddar cheese
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground black pepper

Directions

  1. Preheat oven to broil.
  2. Heat a 9-inch oven safe skillet over medium heat. Add the olive oil and butter and heat for 30 seconds. Add the broccoli, mushrooms and leeks, saute for about 4 minutes. Remove from heat.
  3. In a medium bowl, whisk together the eggs and egg whites. Stir in the shredded cheese, and season with salt and pepper. Add the egg mixture to the skillet. Stir together.
  4. Turn heat to medium-low and cook for about 3 minutes, until eggs begin to set.
  5. Place the skillet under the broiler for about 3 minutes, until the top is set and golden brown.
  6. Remove from oven and let sit for 2 minutes before serving.
