Beef & Rice Lettuce Wraps

Ingredients

  • 1 lb. ground beef
  • 1/2 cup beef broth
  • 1/4 cup chopped green onions
  • 3 tablespoons chili paste
  • 2 tablespoons chopped fresh ginger
  • 2 tablespoons sugar
  • 1 cup cooked white rice
  • 8 romaine lettuce leaves

Directions

  1. In a large nonstick skillet, cook beef over medium heat until browned. Drain off liquids.
  2. Add beef broth, green onions, chili paste, ginger and sugar tp the skillet. Reduce heat to low. Cook for about 5 minutes, stirring occasionally.
  3. Add rice and stir together. Cook for an additional 5 minutes, stirring occasionally.
  4. Fill a large pot with water and bring to a boil. Drop lettuce leaves into the pot and cook for about 2 minutes, until tender.
  5. Fill a large bowl with cold water. Place lettuce in the bowl of cold water. Pat dry with paper towels.
  6. Spoon filling into the center of each piece of lettuce. Fold edges over filling, roll up tightly and enjoy!
