Lemon Dijon Asparagus [Festival]

Ingredients

  • 1 lb. fresh asparagus, rinsed, tough ends snapped off, and cut into 1 1/2-inch pieces
  • 2 tablespoons butter
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon Dijon mustard
  • Sea salt, to taste
  • 1/4 cup freshly shredded Parmesan cheese, for topping
  • Freshly ground pepper, to taste

Directions

  1. Preheat large nonstick skillet over medium-high heat. Add asparagus to dry hot pan and stir quickly for about 3 to 5 minutes.
  2. Add butter, Dijon mustard, and lemon juice and stir well.
  3. Sauté another 3 to 5 minutes or until asparagus is just crisp-tender and remove from heat; season to taste with salt and pepper.
  4. Divide into 4 portions on serving plates and top each with a fourth of the shredded Parmesan.
