Prosciutto Wrapped Mascarpone Stuffed Apricots

MAKES 2 DOZEN

Ingredients

  • 1 (7 ounce) package dried pitted Mediterranean apricots
  • 12 thin slices prosciutto
  • ¾ cup Mascarpone cheese
  • 2 tablespoons powdered sugar
  • 1/8 teaspoon white pepper

Directions

  1. Preheat oven to 425 degrees F.
  2. Cut a slit in each apricot, and set aside.
  3. Cut each slice of prosciutto in half lengthwise, and set aside.
  4. Combine the Mascarpone cheese, powdered sugar, and pepper in a small bowl.
  5. Stuff the apricots with the cheese mixture.
  6. Wrap a piece of prosciutto around each apricot; secure with a toothpick. Set on an ungreased 15- x 10- x 1-inch baking pan.
  7. Bake, uncovered, until heated through, about 15-20 minutes.
