Roasted Corn Salad with Maytag Blue Cheese

Ingredients

  • 4 ears fresh corn, corn cut off
  • 1/2 red onion, chopped
  • 1/4 cup olive oil
  • 4 small handfulls fresh arugula
  • 1 1/2 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil, to add to salad
  • 1/2 cup crumbled Maytag blue cheese
  • Salt, to taste
  • Pepper, to taste

Directions

  1. In mixing bowl combine corn, onion and oil. Spread out on baking sheet and roast in oven at 350 degrees F for 20 minutes. Remove and let cool.
  2. Place in mixing bowl with the remaining ingredients, toss well and serve immediately!
