Cherry Rice Pilaf

Makes 8 Servings

Ingredients

  • 1 C chopped onion
  • 1 C chopped celery
  • 1/2 C dried tart cherries
  • 1/2 C chopped walnuts
  • 1 T chopped fresh thyme (or 1 tsp. dried)
  • 1 T chopped fresh marjoram (or 1 tsp. dried)
  • 1/2 tsp. ground black pepper
  • 1 T margarine
  • 3 C cooked rice

Directions

  1. Put onion, celery, cherries, walnuts, thyme, marjoram, pepper and margarine in a large nonstick skillet. Cook, uncovered, over medium heat 10 minutes, or until vegetables are tender; stir occasionally.
  2. Add rice; mix well. Cook 3 to 4 minutes, or until thoroughly heated.
