Spinach-Stuffed Mushrooms

Serves 6 to 8

Ingredients

  • 3 tablespoons butter
  • 1 pound spinach, cooked, chopped and well-drained
  • 2 garlic cloves, smashed and chopped
  • 3 tablespoons flour
  • 1-1/2 cups hot milk
  • 1/4 teaspoon nutmeg
  • 1-1/4 cups grated mozzarella cheese
  • 2 pounds mushroom caps, cleaned
  • 2 tablespoons melted butter
  • Salt and pepper
  • Juice of half a lemon
  • Dash of paprika

Directions

  1. Place 3 tbsp butter in a large skillet and heat. When melted, add spinach and garlic; cook 3 to 4 minutes over medium-high heat.
  2. Mix in flour and continue cooking 2 to 3 minutes over low heat while mixing constantly.
  3. Pour in milk and season with nutmeg, salt and pepper; mix well. Add 1/2 cup cheese, mix and cook 2 to 3 minutes over medium heat.
  4. Set mushroom caps on ovenproof serving platter; sprinkle with lemon juice, paprika and 2 tbsp melted butter. Broil 5 minutes in oven.
  5. Fill mushroom caps with spinach stuffing and top with remaining cheese. Finish broiling about 5 minutes or until cheese starts to brown. Serve immediately.
