Garlic Butter Cod with Lemon Asparagus

Ingredients

  • 1 cod fillet, cut into 4 chunks
  • Salt, to taste
  • Ground black pepper, to taste
  • 2 bunches asparagus, rinsed and trimmed
  • 1 teaspoon olive oil
  • 2 teaspoons minced garlic
  • 1/2 cup vegetable broth
  • 1/2 stick unsalted butter
  • 1 tablespoon lemon juice
  • 1 tablespoon minced parsley, more for garnish
  • Lemon slices, for garnish

Directions

  1. Season the cod fillet chunks with salt and pepper. Set aside.
  2. Blanch the asparagus in a small pot of boiling water for 2- 3 minutes then soak in ice water. Drain the water and set aside.
  3. Drizzle the olive oil in a large skillet and bring to medium-low heat. Once hot, cook the cod on both sides until golden brown. Remove from the skillet and transfer to a plate.
  4. Increase the heat to medium. In the same skillet, add the minced garlic then pour in the vegetable broth. Bring to a simmer. Add the butter, lemon juice, and parsley. Stir together.
  5. Place the asparagus in the skillet and toss to coat, cooking for 2 minutes. Place the cod back into the skillet and let cook for about 1 minute.
  6. Divide the cod and asparagus amongst 4 serving plates. Drizzle the lemon butter sauce over the cod and asparagus. Garnish with parsley and lemon slices and enjoy!
