Vegan Coconut Lentil Stew with Sweet Potatoes

Ingredients

  • 1 tablespoon coconut oil
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ginger minced
  • 1 teaspoon chili flakes
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground coriander
  • 2 sweet potatoes, chopped
  • 1/2 cup brown lentils, rinsed
  • 3 3/4 cup vegetable stock
  • 1 can coconut milk, 13.5 oz
  • 4 cup kale, chopped
  • 1 tablespoon lime juice
  • Salt, to taste

Directions

  1. Add coconut oil to a large pot. Bring to medium heat. Once hot, add the chopped onion and saute until translucent, stirring frequently. Stir in the garlic, ginger, chili flakes, cumin, turmeric, and coriander. Add the sweet potatoes and lentils, stir to coat.
  2. Pour the vegetable stock into the pot. Cover with the lid and bring to a boil. Reduce the heat to low and let simmer until lentils and sweet potatoes are tender.
  3. Stir in the coconut milk, kale, and lime juice. Return the lid and let cook 3 minutes. Season with salt, stir together and simmer for another minute.
  4. Spoon into serving bowls and enjoy!
