Cheesy Spinach Breakfast Quesadillas

Ingredients

  • 2 teaspoons olive oil
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 4 eggs, beaten
  • 1 1/2 cups spinach
  • 1/2 cup crumbled feta
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 tortillas
  • 1 cup shredded mozzarella cheese

Directions

  1. Pour olive oil into a large non-stick pan. Bring to medium heat.
  2. Once hot, add the diced bell pepper and red onion. Saute for 6 minutes.
  3. Pour the eggs into the pan. Add the spinach and feta cheese and scramble for 2-3 minutes until eggs are cooked through and the spinach and feta are incorporated. Remove the pan from the heat.
  4. Place a tortilla in a second large pan. Spoon 1/4 of the filling onto one side of the tortilla, then top with 1/4 cup of the mozzarella cheese. Fold the other half of the tortilla onto the cheese topping and cook for 2-3 minutes per side, until golden and cheese is melted. Repeat with remaining tortillas, filling, and cheese.
