Feta & Spinach Sweet Potato Quiche

Ingredients

  • 2 sweet potatoes, peeled and sliced very thin
  • Sea salt, to taste
  • Cracked black pepper, to taste
  • 2 teaspoons extra-virgin olive oil
  • 1/2 yellow onion, diced
  • 5 oz. baby spinach
  • 1 clove garlic, minced
  • 1/2 cup plain Greek yogurt
  • 6 eggs
  • 1/4 teaspoon crushed red pepper
  • 2 oz. crumbled feta, more for garnish
  • 2 Roma tomatoes, sliced into rounds

Directions

  1. Preheat oven to 375 degrees F.
  2. Coat a 9-inch pie pan with cooking spray. Arrange a layer of sweet potato slices along the bottom and sides of the pan. Lightly spray sweet potatoes with cooking spray. Sprinkle a tiny amount of salt and pepper over the sweet potatoes. Place pie pan into the oven and bake for 15 minutes.
  3. Pour olive oil into a saute pan. Bring to medium heat. Add diced yellow onion and cook for 5 minutes, stirring frequently.
  4. Add spinach and garlic to the pan and cook for 2 minutes. Remove from heat.
  5. Whisk together the Greek yogurt and eggs in a mixing bowl until fluffy and well combined. Fold in the crushed red pepper, crumbled feta, salt and pepper.
  6. Pour the spinach and garlic over the sweet potatoes in the pie pan. Pour the egg mixture on top and a sprinkling of more feta cheese. Arrange tomato slices over the top.
  7. Place into the oven to bake for 30-35 minutes, until set.
  8. Remove from oven and let cool for 10 minutes before serving.
