Italian Sausage & Sweet Potato Soup

Ingredients

  • 1 lb. Italian sausage
  • 2 cloves garlic, minced
  • 1/2 yellow onion, chopped
  • 1 1/2 lb. sweet potatoes, peeled and diced
  • 1 red bell pepper, chopped
  • 2 sticks celery, chopped
  • 2 cups water
  • 4 cups bone broth
  • Salt, to taste
  • Cracked black pepper, to taste

Directions

  1. Place Italian sausage into a soup pot and bring to medium heat. Break apart while cooking for 5 minutes.
  2. Add minced garlic and chopped onion to the soup pot. Cook for 5 minutes, stirring often.
  3. Add in diced sweet potatoes, chopped red bell pepper, chopped celery, water and broth. Stir together and increase heat to high and bring to a boil.
  4. Once boiling, reduce heat to low, place lid on top and move slightly ajar to vent. Cook for 20 minutes.
  5. Season with salt and pepper, stir well and ladle soup into serving bowls.
