Chicken Thighs with Apples & Apple Cider Mustard Sauce

Ingredients

  • 1 tablespoon olive oil
  • 6 chicken thighs, bone-in, skin on
  • 1 teaspoon kosher salt
  • 1 teaspoon cracked black pepper
  • 2 gala apples, sliced thin
  • 1 tablespoon apple cider vinegar
  • 1 cup apple cider
  • 1/2 cup chicken broth
  • 2 teaspoons whole grain mustard

Directions

  1. Preheat oven to 375 degrees F.
  2. Pour olive oil into a skillet and bring to medium heat.
  3. Liberally season chicken thighs with kosher salt and cracked black pepper. Place chicken thighs into the skillet skin side down and cook for 8-10 minutes, until browned. Flip and cook for 2 minutes. Transfer chicken thighs to a plate.
  4. Place the apple slices into the same skillet and cook for 2-3 minutes, stirring occasionally until lightly caramelized.
  5. Pour the apple cider vinegar into the skillet. Gently stir. Then add in the apple cider, chicken broth and whole grain mustard. Stir until well mixed.
  6. Return the chicken thighs to the skillet. Arrange the apple slices on top and around the chicken thighs.
  7. Transfer the skillet to the oven and cook for 25 minutes.
  8. Place the chicken thighs on serving plates. Spoon the sauce and apple slices over top and enjoy!
