Capellini with Roasted Asparagus, Mushrooms & Dried Tomatoes

Ingredients

  • 3 tablespoons olive oil
  • 1 lb. capellini pasta
  • Ground black pepper (to taste)
  • 1 lb. asparagus (trimmed and cut into small pieces)
  • 2 tablespoons white wine vinegar
  • 2 portobello mushrooms (sliced)
  • Salt (to taste)
  • 1/2 cup sun dried tomatoes

Directions

  1. Cook capellini pasta according to package. Drain water and transfer to large bowl.
  2. Preheat oven to 400 degrees F.
  3. Combine asparagus, mushrooms and tomatoes in a mixing bowl. Drizzle vinegar and olive oil over vegetables and toss together. Transfer to roasting pan.
  4. Season vegetables with salt and pepper.
  5. Place pan in oven and roast for 25-30 minutes.
  6. Serve pasta, top with roasted vegetables.
