Cheesy Broccoli & Hash Browns Bake

Ingredients

  • 2 cups shredded Swiss cheese
  • 2 tablespoons flour
  • 2 cups milk
  • 1/2 cup bread crumbs
  • 1 package cream cheese (cubed)
  • 1 teaspoon salt
  • 6 cups shredded hash browns
  • 1/8 teaspoon ground black pepper
  • 4 tablespoons butter
  • 2 tablespoons flour
  • 1 package chopped broccoli
  • 1/8 teaspoon ground nutmeg
  • Cooking spray

Directions

  1. Preheat oven to 350 degrees F.
  2. Melt 2 tablespoons butter in a saucepan on medium heat.
  3. Add milk, ground black pepper, flour and salt, stir together. Raise heat and bring ingredients to a boil. Cook for 2 minutes until thickened.
  4. Remove saucepan from heat, add Swiss and cream cheeses to pan and melt. Add hash browns and stir together.
  5. Grease a baking dish with cooking spray. Spoon half the hash browns into the baking dish. Top with broccoli, spread out evenly. Add remaining hash browns and spread out evenly.
  6. Cover baking dish with aluminum foil, place into oven and bake for 35 minutes.
  7. While broccoli-hash browns are in the oven, melt remaining butter. Add bread crumbs, coat evenly.
  8. Remove baking dish from oven, top with buttered bread crumbs. Place back in oven and bake for additional 15-20 minutes. (Top should be golden brown)
