48 Hour Spiced Peaches

Ingredients

  • 1/4 teaspoon ground cloves
  • 2/3 cup cider vinegar
  • 1 lb. peaches (sliced)
  • 1/4 teaspoon ground allspice
  • 1 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • Large canning jar

Directions

  1. Place peaches in the jar. (Do not overfill, should be tight fit)
  2. Combine ground cloves, cider vinegar, ground all spice, brown sugar and ground cinnamon in a saucepan. Bring pan to a boil. Reduce heat to simmer, cook for 2-3 minutes.
  3. Pour spiced liquid in the jar. (Do not over fill) Let cool for one hour.
  4. Place jar in the refrigerator, chill for 2 days. Turn jar upside down and shake every once in a while.
  5. Remove from fridge and enjoy! (Try it in salads, as dessert topping, on waffles)
