Spiced Baked Apples with Caramel Sauce Glaze

Ingredients

  • 6 red apples, stemmed, cored
  • 2 tablespoons ground cinnamon
  • 1 3/4 cup sugar
  • 2 tablespoons dark rum
  • 1/2 cup raisins
  • 1/4 cup maple syrup
  • 1/4 teaspoon kosher salt
  • 1/3 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1/2 cup water

Directions

  1. Preheat oven to 325 degrees F.
  2. Mix together cinnamon, 1/4 cup sugar, salt, maple syrup and butter, in a mixing bowl.
  3. Slice the bottoms off each apple. (about a 1/4 inch, so they sit flat) Place apples on baking pan. Pour syrup mixture into the hollow middles of the apples. Cover and bake for 50 minutes.
  4. Pour water and remaining sugar into a saucepan. Turn to medium-high heat. Cook for 20 minutes, until a amber color forms in candied sugar. Pour in rum, heavy cream and raisins. Stir together gently.
  5. Remove apples from oven. Spoon caramel sauce over apples. Serve warm and enjoy!
