Authentic Spinach Enchiladas

Ingredients

  • 10 corn tortillas
  • 2 cups Monterey Jack cheese (shredded)
  • 1 cup ricotta cheese
  • 1 -1/2 cups spinach
  • 2 cloves garlic (minced)
  • 1/2 cup green onions (sliced)
  • 1/2 cup sour cream
  • 1 tablespoon butter

Directions

  1. Preheat oven to 375 degrees F
  2. In medium heat, melt butter in saucepan. Add in onion and garlic, cook for 2 minutes. Mix in spinach and cook another 5 minutes. Remove from heat, mix in pan 1 cup of Monterey, ricotta and sour cream.
  3. Warm tortillas one at a time for 15 seconds, set aside. Add 1/4 cup spinach mix in center of tortillas and roll. Place rolled tortillas face down in baking dish. Pour mix over tortillas and sprinkle with cheese.
  4. Bake 15-20 minutes. Sauce should bubble and cheese browns at edges.
