Marinated Round Tip Steak with Asparagus

Ingredients

  • 3 tablespoons olive oil
  • 1/2 cup balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 2 garlic cloves, crushed
  • 2 tablespoon chopped fresh basil
  • 3/4 teaspoon sugar
  • 2 boneless beef round tip steak
  • 1 lb. fresh asparagus, trimmed
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. Combine olive oil, vinegar, mustard, garlic, basil, and sugar in a small bowl; whisk to combine.
  2. Put steak in a heavy-duty resealable bag then add 1/3 of the marinade; seal bag shut, turn to coat steak, then marinate in refrigerator for 2 hours, turning every now and then.
  3. Cover remaining marinade and refrigerate.
  4. When you are ready to cook steak prepare grill for medium heat.
  5. Prepare asparagus by bringing 1-inch of water to a boil in a large skillet. Reduce heat, add asparagus; cover skillet and cook asparagus until just crisp-tender, about 2-3 minutes. Drain asparagus then pat dry with paper towels. Drizzle with remaining marinade then toss to coat.
  6. Remove steaks from bag; discard any remaining marinade in bag. Grill steaks for 16-20 minutes, until medium rare (145 degrees F), or until desired degree of doneness is reached. Turn steaks once during cooking time. During the last 3 minutes of grilling time, set asparagus on grill around steaks; grill 3 minutes, turning once. Season the steaks and asparagus with salt and black pepper.
  7. Carve steak crosswise into slices then serve with asparagus.
