Pork Chops with Butternut Squash & Apples

SERVES 4

Ingredients

  • 4 boneless pork chops, about ½-inch thick
  • Salt and freshly ground pepper, to season
  • 2 tablespoons plus 1 tablespoon vegetable oil
  • ¼ cup chopped shallots
  • 1 teaspoon chopped fresh sage
  • 1 ½ cups peeled, diced butternut squash
  • 1 tart cooking apple, chopped
  • ½ cup apple-poppyseed dressing

Directions

  1. Season pork chops with salt and pepper.
  2. In a large skillet set over medium-high heat, heat 2 tablespoons oil. Add pork chops; cook for 6 to 7 minutes per side until browned or until chops are completely cooked. Transfer chops to a plate and keep warm.
  3. To same skillet add remaining 1 tablespoon oil, shallots, sage and butternut squash; season with salt and pepper and sauté 2 to 3 minutes.
  4. Add ¼ cup water. Continue cooking for 1 to 2 minutes.
  5. Add chopped apple to skillet; sauté 2 minutes.
  6. Return chops to pan. Add apple-poppyseed vinaigrette and continue to cook until squash is tender.
  7. Serve.
