Sweet Melon Fruit Cups

Serves 4

Ingredients

  • 1 medium honeydew melon
  • 1 medium cantaloupe
  • 1/3 cup melon-flavored liqueur
  • 1/3 cup orange juice
  • 4 teaspoons toasted shredded coconut (optional)

Directions

  1. Using the tip of a serrated knife, mark a guideline around the middle of the honeydew and cantaloupe. Make V-shaped cuts above and below line. Separate melon halves and scoop out seeds. Using a melon baller, scoop melon flesh into balls and place in a medium bowl. Reserve melon shells.
  2. Pour melon-flavored liqueur and orange juice over melon balls; toss to combine. Cover bowl with plastic wrap and refrigerate for 30 minutes. Cover melon shells with plastic wrap; refrigerate until ready to serve.
  3. Spoon melon ball mixture evenly into reserved melon shells. Sprinkle each evenly with coconut. Serve immediately.
