Watermelon Tomato Salad

Ingredients

  • 5 cups seeded watermelon cubes
  • 1 1/2 lb. tomatoes (rinsed, dried and cut into 3/4-inch cubes)
  • 3 teaspoons sugar
  • 1/2 teaspoon salt
  • 1 red onion (peeled, quartered and thinly sliced)
  • 1/2 cup red wine vinegar
  • 1/4 cup extra virgin olive oil
  • Cracked black pepper (to taste)

Directions

  1. In a large bowl, combine watermelon and tomatoes. Sprinkle with sugar and salt, tossing to coat, and let stand 15 minutes.
  2. Stir in onion, vinegar and oil, then cover and chill for 2 hours. Sprinkle with black pepper and serve chilled.
