Buttered Peas

Yields 4-6 Servings

Ingredients

  • 2/3 cup water
  • 1 medium onion, peeled and chopped
  • ½ teaspoon salt
  • 2 tablespoons unsalted butter
  • 1 pound frozen peas

Directions

  1. In a heavy medium saucepan, bring first three ingredients to a boil.
  2. Cook over medium heat, covered and stirring occasionally, until the onion is tender (approximately 5 minutes.)
  3. Increase heat to medium-high. Carefully stir in butter and peas.
  4. Cover and cook, stirring occasionally, until the peas are tender, about 8 minutes; season peas with additional salt before serving.
