Broiled Tomatoes

Makes 6 Servings

Ingredients

  • 3 large salad tomatoes, stems removed, rinsed and dried
  • 3 large garlic cloves, cut lengthwise into slivers
  • 2 teaspoons dried rosemary leaves
  • Freshly ground black pepper
  • ½ teaspoon kosher salt
  • ¼ cup olive oil

Directions

  1. Heat the broiler to 500º F.
  2. Cut the tomatoes crosswise in half; place them cut-side up in a shallow baking pan.
  3. Stick garlic slivers into the tomatoes and sprinkle with rosemary.
  4. Season with a few grinds of black pepper and sprinkle with salt. Drizzle with oil.
  5. Broil tomatoes about 3 inches from the heat for 10 to 15 minutes, or just until the garlic begins to brown and the tomatoes release their juices. Spoon pan juices over the tomatoes; serve.
