Couscous with Feta & Sweet Peas

Yields 6 Servings

Ingredients

  • 1½ cups of water
  • 1 cup uncooked couscous
  • ¼ cup of olive oil
  • 1 tablespoon of fresh lemon juice
  • 1 teaspoon of grated lemon rind
  • ¾ teaspoon of kosher salt
  • 1/8 teaspoon ground red pepper
  • ½ cup of crumbled feta cheese
  • ¼ purple onion, thinly sliced
  • ¾ cup of frozen sweet green peas, thawed
  • ¼ cup of chopped fresh mint

Directions

  1. In a saucepan over high heat, bring water to a boil. Remove from heat and stir in couscous.
  2. Let stand for 10 minutes then carefully transfer couscous to a large bowl.
  3. In a separate bowl, combine olive oil, lemon rind, lemon juice and salt and pepper. With a fork, stir olive oil-lemon mixture into couscous.
  4. Add feta, sliced onion, peas and mint to the couscous. Toss gently to combine.
  5. Cover and chill for 2 hours.
