Baked Brie with Gingered Blueberries

Yields 8-10 Appetizer Servings

Ingredients

  • 1 cup of fresh blueberries, rinsed and dried
  • 1 ½ tablespoons of cornstarch
  • ¼ cup of firmly packed brown sugar
  • 2 tablespoons diced onion
  • 1 tablespoon of grated fresh ginger
  • 2 tablespoons of cider vinegar
  • 1/8 teaspoon of salt
  • 1 (3-inch) cinnamon stick
  • 1 (8-ounce) Brie round
  • Crackers (varieties of your choice)

Directions

  1. In a large saucepan, combine blueberries, cornstarch, sugar, onion, ginger, vinegar and salt. Add cinnamon stick.
  2. Over medium heat, bring mixture to a boil and cook for 1 minute.
  3. Remove and discard the cinnamon stick. Cover and chill blueberry mixture for at least 1 hour.
  4. Place Brie round on an un-greased baking sheet. Bake the Brie in a 350ºF oven until the cheese is soft, about 8-10 minutes.
  5. Transfer Brie to a serving plate. Top the cheese evenly with chilled blueberry topping and serve with assorted crackers.
