Roasted Pear With Brie

Makes 8 servings.

Ingredients

  • 1 6-inch round of Brie (pastry crust optional)
  • 1 T butter or margarine, melted
  • 2 ripe pears, thinly sliced and peeled, if desired
  • 1 tsp. chopped fresh thyme or 1/2 tsp. dried thyme

Directions

  1. Preheat oven to 425 degrees. Remove top rind from cheese and discard. Brush a baking sheet with melted butter. Arrange pear slices on sheet. Roast for 15 minutes. Turn slices and roast 10 minutes more, or until edges are caramelized. Let cool. Top cheese with pears, overlapping the slices or arrange around the cheese, and refrigerate until ready to bake (up to four hours).
  2. Just before serving, heat cheese and pears in a 350-degree oven for 10 minutes, or until cheese is softened. Sprinkle with thyme and serve.
