Watermelon Lemonade Punch

Ingredients

  • 6 cups cubed, seeded watermelon
  • 1 cup simple syrup
  • 2 cups unsweetened pineapple juice
  • 1 can frozen lemonade concentrate
  • Pineapple spears (optional, as garnish)
  • Mint leaves (optional, as garnish)
  • Crushed ice

Directions

  1. In a blender, process watermelon and simple syrup until smooth.
  2. Strain mixture through a fine-mesh sieve, pushing mixture through sieve. Discard solids.
  3. Return the watermelon-simple syrup mixture to the blender then add pineapple juice and lemonade concentrate; blend well.
  4. Pour watermelon punch into glasses filled with crushed ice. Garnish with pineapple spears or mint leaves, if desired.
