Grilled Lemon Artichokes

Ingredients

  • 4 artichokes
  • 1 /4 cup fresh squeezed lemon juice
  • 1/2 cup extra-virgin olive oil, plus extra for grilling
  • Salt and pepper to taste

Directions

  1. Steam artichokes until the outer leaves are just tender.
  2. Remove to a plate and set aside until cool enough to handle.
  3. In the meantime, prepare the grill, and prepare the dressing.
  4. For the dressing, combine lemon juice and 1/2 cup olive oil and season with salt and pepper.
  5. When the artichokes are cool enough to handle, cut each one into quarters using a heavy knife.
  6. Brush each quarter with olive oil and grill for 5-8 minutes, turning often until slightly charred.
  7. To serve, place 4 pieces on each plate and drizzle with dressing.
