Glazed Spinach Salad

Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 1 shallot, chopped
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon soy sauce
  • 1/4 cup duck sauce
  • 1 tablespoon hot sauce
  • 2 lb. spinach, washed, coarsely chopped
  • 1 tablespoon toasted sesame seeds
  • Salt, to taste
  • Ground black pepper, to taste

Directions

  1. Heat the extra-virgin olive oil in a skillet over medium heat.
  2. Add shallots to hot oil and saute for 2 minutes. Add vinegar and soy and whisk into duck sauce.
  3. Reduce heat to low, add hot sauce and add in half the spinach. Toss spinach for 2 minutes, then add the remaining greens and toss.
  4. Transfer to bowls and season salad with salt and pepper, sprinkle toasted sesame seeds over top and enjoy.
