Yogurt Macaroni & Cheese

Ingredients

  • 2 cups fresh spinach
  • 1/4 teaspoon onion powder
  • 2 cups shredded cheese (your preference)
  • Ground black pepper (to taste)
  • 1/4 teaspoon garlic powder
  • 2 cups elbow pasta
  • Salt (to taste)
  • 1/2 cup plain yogurt
  • Water (for boiling)

Directions

  1. Pour water into a pot, bring to a boil. Add macaroni and cook until al dente. (About 8-10 minutes)
  2. Place spinach in the bottom of the strainer. Drain macaroni, let spinach wilt. Save 1/2 of the pasta water. Return macaroni and wilted spinach to pot.
  3. Pour half the pasta water back into pot. Add cheese and stir together with macaroni and spinach. (Let cheese melt while stirring)
  4. Add onion powder, pepper, garlic powder and Greek yogurt. Stir together until well mixed and creamy. Pour remaining water to thin out sauce.
