Serves 4
Ingredients
- 1 cup chopped onions
- 3/4 cup chopped green peppers
- 2 tsp vegetable oil
- 8oz cam tomato sauce
- 1 tsp chopped parsley
- 1/2 tsp black pepper
- 1 1/4 tsp minced garlic
- 5 cups cooked brown rice
- 3 1/2 cups skinless, boneless
- cooked and diced
Directions
In a large skillet, sauté onions and green peppers in oil for 5 minutes on medium heat (keep stirring to keep from burning)
Add tomato sauce and spice
Simmer about 5 minutes until heated through
Add cooked rice and chicken, slowly
simmer another 5-10 minutes until heated through
Serve
