Ingredients
- (3) frozen chicken breasts
- (1) package of Fajitas seasoning packet
- (1) can of diced stewed tomatoes
- (1) box of Spanish Rice
- (1) Can black beans
- (1) lg can of enchilada sauce or green chili,
- yellow corn shells
- (1 to 2) bags shredded cheese
Directions
Place FROZEN chicken in a crockpot, mix fajita packet with stewed tomatoes then pour over frozen chicken.
Cook on high for 4 hours or until chicken can be pulled apart with fork.
Make Rice as called for on box.
In a 9×9 high sided pan layer corn shells, chicken, beans,rice, cheese, and enchilada sauce.
Repeat until no more layers fit. Leave enough room at the top so you can cover the entire top with enchilada sauce and cheese.
Bake at 350 until heated through.
