Ingredients
• 1 1/2 teaspoons seasoned salt • 1 teaspoon ground thyme • 2 pork tenderloins, 1 lb each • 1 cup peach preserves • 1 tablespoon Worcestershire sauce • 1 teaspoon ground ginger
Directions
Before serving, slice pork and serve with pan juices. Preheat oven to 375 degrees F.
In a small bowl, combine seasoned salt and thyme. Rub salt-thyme mixture all over pork. Set pork on a rack that is set inside a foil-lined roasting pan. Put pork in oven and roast for about 40 to 45 minutes, or until desired degree of doneness is reached.
While pork is roasting, in a small bowl, combine preserves, Worcestershire sauce and ginger. During the last 10 minutes of cooking time, spoon the preserve mixture over pork.
