Vanilla Orange Candied Cranberries

Ingredients

  • 1 3/4 cups water
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup orange juice
  • 2 tablespoons orange zest
  • 1 whole cinnamon stick
  • 12 oz. cranberries
  • For Coating:
  • 2 cups sugar

Directions

  1. Pour the cranberries into a large bowl.
  2. In a large pan, combine the water, sugar, vanilla extract, orange juice, orange zest, and cinnamon stick. Bring to a boil.
  3. Reduce heat to low and continue to simmer for 5 - 7 minutes, until thickened.
  4. Remove from heat and let cool for a few minutes.
  5. Pour the entire sugar mixture over the cranberries.
  6. Place the bowl of cranberries in the refrigerator overnight.
  7. Place a colander over a large bowl. Pour the cranberries into the colander, allowing the syrup to drain into the bowl. Let the cranberries sit in the colander for 30 minutes.
  8. Pour the 2 cups of sugar for the coating onto a sheet pan.
  9. In small batches, gently pour and roll the cranberries mixture in the sugar, coating evenly.
  10. Let the cranberries sit in the sugar for 3 hours. Then enjoy as a treat, a garnish for a drink.
