Street Corn Rotini Pasta Salad

Ingredients

  • 1 package frozen corn, 12 oz.
  • 16 oz. rotini pasta
  • 2 jalapenos, chopped
  • 1 bunch green onions, chopped
  • 1 red bell pepper, chopped
  • 3 tablespoons chopped cilantro
  • 1/4 cup grated parmesan cheese
  • 1 cup crumbled cotija cheese
  • 2/3 cup sour cream
  • 2/3 cup mayonnaise
  • 2 teaspoon chili powder
  • 1/4 cup lime juice
  • Salt, to taste
  • Ground black pepper, to taste

Directions

  1. Cook the corn according to package instructions and let cool completely.
  2. Cook the pasta according to package instructions. Pour the pasta into a colander to drain the water and rinse the pasta under cold water.
  3. Transfer the pasta into a large bowl. Add the corn, jalapenos, green onion, red bell pepper and cilantro to the bowl. Sprinkle the parmesan and cotija cheeses over top. Stir together.
  4. Combine the sour cream, mayonnaise, chili powder and lime juice into a small bowl. Whisk together until well combined.
  5. Pour the sour cream mixture over the pasta and stir to coat evenly. Season with salt and pepper. Cover and refrigerate for 2 hours.
