Squash Salad

Makes 4 servings

Ingredients

  • 3 medium yellow pattypan squash, cut into 1/4-inch dice
  • 3 medium plum tomatoes, cut into 1/4-inch dice
  • 1 1/2 C cooked black beans
  • 1/4 C fresh lime juice
  • 1 T olive oil
  • 1 T vegetable oil
  • 1/4 tsp. ground coriander
  • 1 large avocado, pitted, peeled, cut into 1/4-inch dice
  • Sprigs of cilantro, for garnish

Directions

  1. Mix squash, tomatoes, black beans, lime juice, olive and vegetable oils and coriander in large bowl. Season to taste with salt and pepper.
  2. Gently stir in avocado. Garnish with cilantro sprigs and serve immediately.
