Melon & Mint Soup

Ingredients

  • 1 cantaloupe, halved and seeded
  • 1 cup orange juice
  • 1/2 cup white wine
  • 2 tablespoons honey
  • 10 mint leaves, cut into strips
  • 1/4 teaspoon salt

Directions

  1. Cut half the melon into large chunks. Place chunked cantaloupe in a blender. Add orange juice, honey, white wine and salt to blender. Blend until smooth, pour the mixture into a bowl, and stir in the mint.
  2. Place in the refrigerator to chill.
  3. Remove bowl from the refrigerator. Dice the remaining melon and add it to the soup.
  4. Ladle the soup into bowls and enjoy.
