Easy Broccoli, Chicken & Rice Casserole

Ingredients

  • 1 lb. chicken breasts, diced
  • 1/2 cup shredded cheddar cheese
  • 1 can cream of chicken soup, 10.5 oz.
  • 1 cup uncooked long grain white rice
  • 1 bag frozen broccoli florets, 12 oz.
  • 3/4 cup water
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Directions

  1. Preheat oven to 375 degrees F. Grease a medium baking dish with cooking spray.
  2. Pour cream of chicken soup and water into baking dish, stir together.
  3. Add rice, chicken and broccoli to baking dish. Season with salt and pepper. Stir ingredients together.
  4. Cover baking dish with foil and place in oven. Bake for 1 hour. Remove from oven and top with cheddar cheese. Return to oven and bake for 3-5 additional minutes.
