Lemon-Parmesan Asparagus

Ingredients

  • 1 lb. asparagus, rinsed, white bottoms discarded
  • 2 tablespoons Extra-virgin olive oil
  • 1 teaspoon lemon zest
  • 2 tablespoons freshly grated Parmesan cheese
  • Salt, to taste
  • Freshly ground black pepper, to taste

Directions

  1. Cut asparagus into 2-inch sections, slicing at a diagonal.
  2. Bring a pot of water to a boil. Add asparagus then reduce heat to a simmer. Cook asparagus for 2 minutes then drain.
  3. Place hot asparagus in a bowl. Drizzle with olive oil then add lemon zest and Parmesan cheese. Stir ingredients to combine. Season with salt and pepper then serve.
