Apple Spice Cake

Ingredients

  • 2 cups flour
  • 1/3 cup sugar
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cloves
  • 3/4 cup unsweetened applesauce
  • 2 egg whites, lightly beaten
  • 2 tablespoons molasses
  • 2 tablespoons vegetable oil
  • 1 Granny Smith apple, peeled and chopped (1 cup)
  • 1/2 cup golden raisins
  • 1 teaspoon powdered sugar

Directions

  1. Preheat oven to 350 degrees F. Spray an 8-inch round cake pan with vegetable cooking spray.
  2. In a large bowl, combine flour, sugar, baking powder, cinnamon, ginger, baking soda, salt, and cloves. Mix well.
  3. In a medium bowl, combine applesauce, egg whites, molasses, and oil. Mix well.
  4. Make a well in the center of dry ingredients; add applesauce mixture and stir until just combined. Stir in apple and raisins. Spread batter evenly into prepared pan
  5. Bake cake until a toothpick inserted in the center comes out clean, about 30 to 35 minutes. Place pan on a wire rack and cool for 10 minutes. Turn cake out onto rack and cool completely. Dust top with powdered sugar.
