Tomato & Asparagus Salad

Ingredients

  • 4 tomatoes, coarsely chopped
  • 1 lb. asparagus, tips cut off
  • 4 teaspoons balsamic vinegar
  • 1 clove garlic, minced
  • 1/4 red onion, chopped
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon extra-virgin olive oil
  • Water, for boiling

Directions

  1. Fill a medium pot with water. Add asparagus tips. Bring pot to a boil. Cook asparagus for 3 minutes. Remove pot from heat and drain water. Rinse with cold water and drain. Set aside.
  2. In a small mixing bowl, combine balsamic vinegar, garlic, salt, pepper and olive oil. Stir together well.
  3. Transfer asparagus tips, chopped tomatoes and red onion to a salad bowl. Drizzle balsamic mixture over asparagus mixture and toss together.
