Baked Broccoli Tots

Ingredients

  • 1/3 cup Italian breadcrumbs
  • 1 teaspoon salt
  • 1/4 cup diced yellow onion
  • 2 cups broccoli florets
  • 1 teaspoon ground pepper
  • 2 tablespoons parsley
  • 1/3 cup shredded cheddar cheese
  • 1 egg
  • 1/3 cup panko breadcrumbs

Directions

  1. Preheat oven to 400 degrees F. Grease a baking sheet with cooking spray.
  2. Fill a small pot with water. Bring to a boil. Once boiling, add broccoli and blanch for 1 minute. Transfer broccoli to a colander and rinse under cold water.
  3. Chop broccoli up. Transfer to a mixing bowl. Add Italian breadcrumbs, salt, diced onion, pepper, parsley, cheddar cheese, egg and panko breadcrumbs to mixing bowl. Mix together well. Spoon out a small amount and shape into tater tot shape with hands. Arrange tots on baking sheet.
  4. Place baking sheet in oven and bake for 18-24 minutes. Flip tots half way through baking. (Tots should be golden brown and crispy)
