Strawberry Avocado Kale Salad with Strawberry Vinaigrette

Ingredients

  • For Salad
  • 1 cup strawberries (halved)
  • 1 avocado (peeled, pitted and sliced thin)
  • 6 cups torn lettuce (ribs removed)
  • For Vinaigrette
  • 4 tablespoons honey
  • 1 clove garlic (minced)
  • 2 cups whole strawberries
  • 3/4 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1/4 cup apple cider vinegar
  • 3/4 teaspoon salt

Directions

  1. Combine strawberries, avocado and kale in a salad bowl. Toss together.
  2. Place honey, garlic, strawberries, black pepper, olive oil, apple cider vinegar and salt in a blender. Pulse until well mixed.
  3. Drizzle dressing over salad and toss together.
