Vegan Quinoa Avocado Spinach Salad

Ingredients

  • For salad:
  • 2 avocados (diced)
  • 2 cups cherry tomatoes (halved)
  • 1 cup dry quinoa
  • 3 green onions (sliced)
  • 1 cup baby spinach (chopped)
  • For dressing:
  • 2 tablespoons olive oil
  • 1/8 teaspoon salt
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic (minced)

Directions

  1. Follow directions on package for cooking quinoa.
  2. As quinoa is cooking, whisk together olive oil, salt, red wine vinegar and minced garlic. Set aside after well mixed.
  3. Place chopped spinach in a salad bowl. Add cooked quinoa to salad bowl and toss together.
  4. Add cherry tomatoes and green onions. Stir ingredients together.
  5. Add avocado to bowl and gently toss.
