Addictive Brussels Sprouts & Kale Salad

Ingredients

  • 12 oz. Brussels sprouts (trimmed and grated)
  • 1/3 cup almonds (chopped)
  • 1 clove garlic (grated)
  • 1/4 cup lemon juice
  • 1 cup grated Parmesan cheese
  • 2 bunches kale (chopped)
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon kosher salt (more for taste)
  • 1/2 cup olive oil
  • 1 tablespoon minced shallots
  • Ground black pepper (to taste)

Directions

  1. Combine garlic, lemon juice, Dijon mustard, kosher salt and pepper in a mixing bowl. Mix well and set aside.
  2. In a separate bowl, combine Brussels sprouts and kale.
  3. Pour 1 tablespoon of olive oil in a skillet. Heat to medium-high. Toast almonds in skillet for 2 minutes. Transfer almonds to paper towel. Sprinkle with a small amount of salt.
  4. Pour lemon juice mixture into olive oil and whisk together.
  5. Drizzle dressing over kale and toss together. Season with salt and pepper.
