Avocado, Corn & Tomato Salad

Ingredients

  • 2 tablespoons fresh lime juice
  • 2 pints cherry tomatoes (quartered)
  • Ground black pepper (to taste)
  • 2 scallions (sliced thin)
  • 1 tablespoon vegetable oil
  • Coarse salt (to taste)
  • 1 ear corn (cleaned and tip cut off)
  • 1 avocado (halved, pitted and diced)

Directions

  1. Remove corn kernels with knife. Place kernels in a salad bowl.
  2. Add scallions, vegetable oil, cherry tomatoes, lime juice and avocado to salad bowl. Season with coarse salt and ground back pepper. Toss ingredients together well. Spoon onto servings plates and enjoy!
