Nectarine & Spinach Salad

Ingredients

  • 1 bag baby spinach
  • 1/4 ground black pepper
  • 1 shallot (thinly sliced)
  • 2 nectarines (pitted and cut into wedges)
  • 2 teaspoons olive oil
  • 2 tablespoons orange marmalade
  • 1/4 cup slivered almonds
  • 2 tablespoons white balsamic vinegar
  • 1/4 teaspoon salt

Directions

  1. Pour shallots and orange marmalade in a microwave-safe bowl. Cook for 1 minute on high.
  2. Stir in salt, white balsamic vinegar, black pepper and olive oil.
  3. Toast almonds in a skillet on medium heat. Set aside.
  4. Place baby spinach in a salad bowl, add marmalade mixture and marmalade mixture. Toss together and enjoy.
