Apple & Greek Yogurt Parfait

Ingredients

  • 2 tablespoons walnuts
  • 6 oz. Greek yogurt (honey flavored)
  • 1/4 teaspoon cinnamon
  • 1 Fuji apple
  • 1/2 cup quinoa

Directions

  1. Follow package directions to cook quinoa. After cooking place in refrigerator.
  2. Dice apple into small chunks, sprinkle with cinnamon and warm in the microwave on low t medium setting until soft. (about 45 seconds to a minute)
  3. In desired container, layer Greek yogurt, quinoa, walnuts and apple wedges. Top with Greek yogurt and enjoy!
