Corn Bread with Diced Hot Dogs

Ingredients

  • 10 hot dogs (diced)
  • 2 eggs
  • 8 1/2 oz. cornbread mix
  • 1 1/2 cups milk
  • 1 cup Cheddar cheese (grated)
  • 2 tablespoons brown sugar
  • Cooking spray

Directions

  1. Preheat the oven to 400 degrees F.
  2. Coat the inside of the muffin tin with cooking spray.
  3. Mix together brown sugar and cornbread mix in a large mixing bowl.
  4. In a separate smaller bowl, whisk together milk and eggs. Whisk until the mixture is smooth.
  5. Add wet mix to dry mix, sprinkle in cheese and mix together.
  6. Pour a small amount into muffin tins, add hot dog slices and top off with muffin mix.
  7. Place tin into oven and bake 14-18 minutes. Tops should become golden brown.
